Hello, hello! I was not ready for this weekend to end, the amount of relaxing I did was wonderful. Actually Sunday, I basically just laid around, but also enjoyed the sunny weather. That’s what weekends are for, relaxing! I also somehow manged to stay up past 10pm Friday and Saturday, just barely, but did. That called for some sleeping in on Saturday and Sunday as well, but lets back up to Friday.
Friday evening after work was frustrating as I was on the train home, the train got stuck at a signal for 20 minutes, literally! It was very frustrating, especially for the people I overheard talking about how they had snuck out of work a bit early but then they were basically going to get home at the same time…figures.
I got home and put together a random dinner of leftover chicken fried rice and fresh made guacamole and chips while waiting for Brian to arrive. Then I made a drink recipe from the Breaking Vegan book and we enjoyed the drinks while watching a couple movies.
The weather on Saturday was not great, cloudy and sprinkling rain every so often. I made some whole wheat pancakes for a late breakfast (9am) and then headed to Target.
I spent enough time at Target that it was past 11am, so early lunch time. Though I wasn’t that hungry, I was really craving some Panera and I knew I had a reward to use, so might as well stop on my way home. I got the pick 2, power kale chicken ceaser salad and bacon turkey bravo. I love the Parmesan crisps in the power kale salad, so yummy.
By the time I got home and ate, it was almost time to head out again. I went to a yoga anatomy sequencing workshop back at my old studio, so it was about an hour drive there. Brian tagged along and drove around the area while I was at my workshop. I was so excited to join the new teacher trainees in this workshop and learn more about anatomy and poses. It is so important in yoga to know that there is not one way to do a pose and you need to align YOUR body to the pose as everyone’s spine and body is different. It was also interesting when the teacher talked about how people come to yoga because they have pain somewhere in their body and from that pain, you might be able to look at the person’s body and see what may be out of alignment to try to work on through yoga and help them. I definitely have a lot more anatomy to learn before I can feel comfortable to tell people certain exercises, but I have found the anatomy so interesting to learn. Before yoga teacher training, I was never into learning anatomy, but now it fascinates me as I learn more about the human body and my own body and alignment. I learned so much in just the two hours and it was nice to see some of my friends in the workshop.
After the workshop, Brian and I had the typical date night (but I was wearing yoga pants), dinner and a movie. But first we drove by our old apartment, or rather a giant dirt pile as they finally tore it down. I am curious to see what gets built as it is quite a good size plot of land.
We drove up to the King of Prussia mall and ate at our favorite mexican restaurant, Cantina Laredo. They have delicious guacamole made at the table and steak fajitas. Brian also ordered a couple drinks, the mojito was pretty good. [Side note: I don’t drink as I am just not a fan of alcohol, but I think after 4 years since becoming legal to drink, I have found that mojitos are not bad.]
I realized that Saturday I had 3 meals and not any snacks, so rare for me, but since I was busy and the meals were a decent size, they kept me full.
With our bellies full, we headed to the theater across the street and saw the Peanuts movie. I really enjoyed it. Love the Peanuts characters!
After the movie, we still had to go grocery shopping. Luckily the Wegmans we were near is open 24 hours and I got my weekly groceries pretty quickly.
When we got home, I was ready to sleep, but since Brian is coming off of night shifts, he is wide awake at night and he put on another movie and I think I fell asleep on the couch shortly after 11 and we finally moved to bed at midnight.
The sun woke me up Sunday morning around 8:45!! I really can’t remember the last time I slept in until nearly 9. Most of the day was spent lounging around and a bit of cleaning. We also headed outside for a walk, because we had to enjoy the sunshine and the river.
In the afternoon, we walked around the mall and got some food to go and ate at home, watched some HGTV and played games.
I was so relaxed on Sunday and it felt so amazing! Sometimes you just need a day of lounging around and sleeping in to feel refreshed for the week.
Thank you Katie!

Now I really wand fajitas! I love going to Panera, if only because the rewards make it SO worth it! I’m always getting free food!

It takes me forever to get rewards at Panera, but now that the receipts tell you how many visits until your next reward it makes me want to go more…

I think all Sundays require at least a movie and HGTV.:) Happy Monday!

Yes definitely! I try to get all my errands done on Saturday and relax on Sundays when possible
